BIO: Kim Gibson Clark is currently the Executive Director of Eugene’s Table and Founder of OnyxConsulting. She is the former CEO and co-owner of Coconut Bliss and Cousin Jack’s Pasty Company, and was the General Manager of Lochmead Dairy. Kim has 24 years in Food & Beverage Manufacturing and CPG, and is on the Boards of Oregon Tilth (President) and Oregon Supported Living Program (past President), as well as serving as a Trust Protector on the TPC of Organically Grown Company. Kim, a Leo, has shared 15 loving years with her Pisces husband David Clark, and they have a 14 year old Capricorn daughter named Zoe who makes volleyball look easy and baking look like a sport.
